Rio Zarco is a modern cooperative in the Chalatenago Region of El Salvador. At the Rio Zarco Coffee Mill, where all the farmers bring their picked beans to be milled, there is a computerized system for judging how many truly ripe berries, as opposed to unripe berries, are in a Lot. The farmers with the most ripe berries in their pickings are given a bonus on top of their normal cooperative share.
The resulting beans truly show off the benefits of the Honey Process with a smooth cup that still has plenty of body to satisfy. Some say the Rio Zarco has a hint of peanut to it.
On the scale of Low Acid Coffee Beans to High Acid Coffee Beans this El Salvador falls in the middle as a Medium Acid Coffee that hits you right away and then mellows out.
